How Does the Product Development Process Work for Purple Tortilla?

The purple tortilla range was never just about creating an eye-catching shelf product. The real challenge was to combine a strong visual effect with a natural ingredient profile while making sure the product still behaved correctly in professional kitchen conditions. In other words, it had to be noticeable, but it could not add operational friction during service.

During development, our first priority was the balance between color stability and texture. We did not want to gain visual impact at the cost of flexibility. The same was true for taste balance. While building a product with higher antioxidant value and a more distinct identity, we evaluated it not only as a nutritional alternative but also as a differentiating line within the brand portfolio. That is why flavor profile, surface appearance and ease of use were all assessed together before finalization.

Repeatability is always critical in professional kitchens. If a product looks impressive on the first try but cannot deliver the same result during daily service, it does not create long-term value. For that reason, we tested fold resistance, post-heating behavior, visual consistency on the plate and compatibility with different recipes as one combined performance set. The outcome was not just a product that looks good in display, but one that works comfortably in the kitchen.

For us, purple tortilla also shows how product development should be read. We do not add a new product to the portfolio simply because it looks different. We ask what it adds to the brand, how much ease it brings to the kitchen and how clearly it can be explained in the field. That is why we see product development not as decoration, but as a strategic discipline.
